Thai Style Yellow Coconut Vegetable Curry


We start this curry off with a paste of ginger, garlic, and fresh aromatic kaffir lime leaves plus a plethora of spices. Tons of flavor without any heat or nightshades.

And the first of the winter squash is in from Kilt Farm. The sweet squash plus curry spices is a delightful combo.

A delicious, different way to get in all your veggies and nice dose of fresh ginger and garlic!

Organic broccoli, organic cauliflower,  organic organic carrot, organic local butternut squash, and organic onion we simmer with a mild organic coconut milk sauce (guar gum free)  with yellow curry spice blend from Savory Spice Shop (coriander, turmeric, ginger, fenugreek, anise, cumin, Saigon cinnamon, black pepper, regular yellow mustard, mace and cardamom), fresh organic ginger, organic garlic, fresh squeezed organic lemon and lime juice, and Real sea salt.  

Delightful with our Garlic Rice.

Quart or Pint. Price includes $1.25 jar deposit. One Quart serves 3-4 with sides.  

Freezes well.

Freezable in straight-edged mason jars with appropriate head room or other freezer safe container. Simply run the frozen jars under warm water to slide out and heat.
