Black Lentil Salad with Tangy Lemon & Optional Goat Cheese


Bright and refreshing with a nice grounding earthiness from the black lentils.

We soak then simmer organic baby beluga black lentils - a beautiful variety of small lentils with nice flavor and bite -  in a vinaigrette of minced organic red onion, extra virgin olive oil, organic lemon juice, mustard (organic mustard seed, organic apple cider vinegar), a dash of organic maple syrup and sea salt.

Then we add organic baby spinach for a little crunch.

Aromatic organic parsley leaves and (optional) fresh goat cheese bring it all together. 

Quart or Pint. Quart serves 3 as a main. Price includes $1.25 jar deposit.

Freezable in straight-sided mason jars (no curved shoulders) with appropriate head room or other freezer safe container. Simply run the frozen jars under warm water to slide out and heat or defrost first in fridge overnight.
