We're also using a very traditional cooking fat: pasture raised organic ghee.
Ghee is a type of clarified butter.* It adds a beautiful rich and soothing element to dishes. It has been used in India for centuries as a cooking fat, especially helpful due to its high smoke point, and for its medicinal qualities in Ayurvedic medicine.
The ghee* we use is pure milk fat. This means no lactose remains in the fat, so if you are intolerant you may be able to eat ghee. Each batch is tested to ensure there is no lactose.
This dish features hearty vegetables sauteed in ghee including organic carrot, organic butternut squash, organic cauliflower, organic green beans, organic tomatoes, organic celery, organic kale, and organic onion simmered in a bright broth of filtered, pH balanced water infused with turmeric, organic cumin seed, organic coriander, organic lime juice and zest, organic jalapeño, and Real sea salt.
Finished with fresh organic tarragon and fresh organic dill. This will surprise you with its intensity.
Enjoy garnished with your favorite plain yogurt at home if you wish.

*To make ghee, butter is simmered and water evaporates, causing the fat to separate from the milk solids. It is different from other clarified butters because it is continued to cook with the milk solids until they caramelize, which makes it nutty-tasting and aromatic.
