Curried Chicken Salad with Toasted Cashews

Super satisfying!  We brine organic chicken, roast it, then toss it with our house made olive oil mayonnaise*, crunchy organic celery, organic green apple, plump organic raisins, Savory Spice Shop's mild curry powder (coriander, turmeric, ginger, fenugreek, anise, cumin, cinnamon, black pepper, yellow mustard, mace and cardamom), organic parsley,  fresh squeezed organic lemon juice, toasty roasted cashews and Real sea salt.  

We love it for lunch over a bed of salad greens or on our Paleo Sandwich Bread.

*We make our mayonnaise with olive oil, organic extra virgin olive oil, organic mustard, organic fresh squeezed lemon, organic eggs and salt. Note: our mayonnaise is traditionally made with raw egg.
