Garlicky Oregano Pesto Zucchini Bake with Optional Cheese

Featuring fresh-picked local zucchini and summer squash from Red Wagon Organic Farm!

This is a garlicky, dressed up and succulent vegetable side that the oregano and pine nut pesto really makes something special.

We slice tender, flavorful organic, local Red Wagon Farm zucchini and bake in layers smothered with smashed pesto sauce of organic garlic, pine nuts, organic extra virgin olive oil, organic fresh oregano and Real sea salt. 

Optional - Try it topped with a mix of Pecorino and sheep's milk feta cheese.

This is a delicious side or light lunch on its own- or breakfast! Susanna loves to eat it topped with a fried egg.

One Tin. Serves 4+ as a side, 3 as a vegetarian main.

Can be frozen but the texture is best enjoyed fresh.
