Balsamic Roast Root Vegetables with Optional Beef


Featuring Red Wagon Farm butternut squash, golden beets, and tender parsnips, this dish highlights some of the best local produce of this fall season.

In this version, we roast Red Wagon Farm organic butternut squash and golden beets and parsnips with organic carrots tossed in extra aged balsamic vinegar, olive oil and a little sea salt until tender. 

Add optional slow braised, tender shredded 100% Colorado grassfed beef.

Delicious warmed paired with our Quinoa Pilaf, on its own, or even cold on a salad. Yum!
