Delicious Mexican comfort food with a taste that really pops.
We've gotten more direct positive feedback on this dish than any other, including from Connor, then a 12 year old customer (and budding food writer!):
"The Tamale Pie is the best. The beans on the bottom are suburb as they are homemade and the sauce makes it even better. It is topped with a wonderful layer of cheese that combine all of the flavors for a perfectly harmonious dish. Making meals with organic, fresh ingredients really pays off."
Cooked from scratch organic black beans and organic adzuki beans, organic onions, organic local Kilt Farm red pepper and organic cilantro smothered with our freshly-made, mildly spicy enchilada sauce (organic onion, organic tomato, organic Red Wagon Farm roasted poblano chiles, paprika, Mexican oregano, New Mexican chile) and creamy polenta (ground non-GMO, Colorado grown on Ute reservation corn cooked with milk and pink Himalayan sea salt) spread on top.
Then we melt Tillamook cheddar cheese on top to finish it for that gooey, cheesy goodness.
One Tin serves 3 -4. Delicious with our Garlic Rice. And some avocado on top!
Freezes very well making this a wonderfully convenient dish!
Defrost then bake uncovered at 350 for 10-15 minutes or until warm.
