Cambodian Lemongrass Coconut Vegetable Curry


We start this curry off with a paste of ginger, garlic, and lemongrass plus a plethora of spices. Tons of flavor and a little bit spicy.

Organic cauliflower, organic broccoli, organic delicata squash, organic sweet pepper, organic carrot, and organic onion we simmer with a mild organic coconut milk sauce (guar gum free) with Cambodian lemongrass curry spice blend from Savory Spice Shop (coriander, turmeric, ginger, fenugreek, anise, cumin, Saigon cinnamon, black pepper, regular yellow mustard, mace and cardamom), fresh organic ginger and garlic, fresh squeezed organic lemon and lime juice, and Real sea salt.  

Add shrimp, cooked chicken, or your favorite protein when heating if you like.

Quart or Pint. Price includes $1.25 jar deposit. One Quart serves 3-4 with sides.  

Freezes well.

Freezable in straight-edged mason jars (no curved shoulders - no quarts are freezer safe) with appropriate head room or other freezer safe container. Simply run the frozen jars under warm water to slide out and heat.
