Lemony Fresh Beet Salad

A refreshing and enlivening way to eat beets from and a great way to get raw veggies seasonally.  Earthy, grounding, and infused with bright lemon flavor.

We grate organic beets  - a rainbow of colors! - from Red Wagon Organic Farm and mix with organic fresh squeezed lemon juice, organic extra virgin olive oil, organic fresh parsley, and Real sea salt.  If you haven't tried this, do. It's a whole different (and tasty) world of beets. 

This can also be sauteed at home, if you prefer.
