This Is Kale's Time to Shine November 04 2016

From Amy at Red Wagon Farm on their order list today (Wednesday):
This is the best fall KALE we've ever grown. It is sweet (due to the cold nights) and gorgeous.

We're psyched! So we've featured kale in many of our recipes this week.

If you're on the fence about kale, now is the best time to give it another chance. And if you love it already, you'll really love this.  Kale, along with its other relatives in the brassica family including radish and cabbage (which we're also featuring), actually produces more sugars in response to cold and frost. Kale particularly loses its bitterness with cold conditions.

Kale it up this week:

Aromatic Gingered Greens with Sweet Winter Squash

Aromatic Gingered Greens with Sweet Winter Squash available from Back to Basics Kitchen in Broomfield, CO.

Satisfying Frittata with Kale and Gold Potato

Crunchy Slaw with Red Wagon Farm Kale, Cabbage and Radish and Lime -
three local organic cold-sweetened vegetables in one dish!

(And if you love the kale now but the bitter factor is tough for you at other times of the year, try pairing it with raisins, dried cherries, and/or apple juice sweetened dried cranberries for a fun sweet balance to take the edge off).
